Method

  1. Heat a large deep skillet with a lid over medium-high heat. Add the ground beef and onion, break the beef into crumbles, and let it sit for 2 minutes before stirring so it browns. Cook 6 to 7 minutes total until no pink remains.
  2. Mince the garlic and stir it in with the chili powder, cumin, smoked paprika, and salt. Cook 1 minute, stirring, until the spices smell toasted and coat the beef.
  3. Drain and rinse the black beans. Add the beans, instant brown rice, beef broth, frozen corn, and the diced tomatoes with their juice to the skillet. Stir well and scrape up anything stuck to the bottom.
  4. Bring to a boil, then lower the heat to a gentle simmer. Cover and cook for 10 minutes without lifting the lid.
  5. Check the rice. It should be tender and most of the liquid absorbed. If it is still firm, add a quarter cup of water, cover, and cook 3 minutes more.
  6. Turn off the heat, sprinkle the cheddar evenly over the top, and cover for 2 minutes until it melts.
  7. Scatter the cilantro over the top and serve straight from the skillet with lime wedges if you have them.

Notes

Instant brown rice is the key to keeping this at 25 minutes. Regular brown rice will not finish in time. For lower sodium, rinse the beans well and use 0.5 cup of cheese. Nutrition is calculated per serving from the listed ingredients and may vary with brands and substitutions.
