Ingredients

  • 1 cup old fashioned oats
  • 0.5 cup almond butter
  • 2 oz vanilla whey protein powder
  • 2 tbsp molasses
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.125 tsp ground cloves
  • 0.125 tsp salt
  • 2 tbsp unsweetened almond milk

Method

  1. In a large bowl, stir together the oats, protein powder, ginger, cinnamon, cloves, and salt.
  2. Add the almond butter, molasses, honey, and vanilla. Stir with a sturdy spoon or your hands until evenly mixed.
  3. Add the almond milk 1 tablespoon at a time, just until the mixture holds together when you squeeze it.
  4. Cover the bowl and chill 15 minutes so the mixture firms up.
  5. Scoop about 1.5 tablespoons at a time and roll into balls with lightly damp hands. You should get about 14.
  6. Eat right away or store in an airtight container in the fridge.

Notes

Chilling the mixture for 15 minutes before rolling is the key technique: it firms up and stops sticking to your hands. Protein powders vary in how much liquid they absorb, so add the milk slowly. Use regular unsulphured molasses, not blackstrap. Nutrition is calculated per serving from the listed ingredients and may vary with brands and substitutions.
