It’s 6:15, you haven’t thought about dinner, and the takeout app is already open. This 20-minute lemon garlic chicken and broccoli skillet is the recipe I want you to have in your back pocket for exactly that moment.
One pan. A chicken breast, a head of broccoli, garlic, a lemon, and a splash of broth. It comes in at 43 grams of protein and about 400 calories per serving, and the only thing you’ll wash is the skillet.
A skillet like this earns its place because it solves the real weeknight problem: not “what’s healthy” but “what can I actually make before I give up.”
- 20 minutes start to finish, including chopping, in one skillet
- 43 g protein per serving for about 400 calories, plus 6.5 g of fiber from the broccoli
- The trick is cooking the chicken first and setting it aside, so it stays juicy while the broccoli steams
- Frozen broccoli works; add it straight from the bag and cook a couple of minutes longer
- Serve it alone to keep dinner light, or over brown rice or quinoa if you trained today
Why This Is My Go-to Weeknight Dinner for Women over 35
Most of the women I coach aren’t short on information. They’re short on time and energy at the end of the day. A dinner that takes 45 minutes is a dinner that gets skipped, and skipped dinners turn into 9 p.m. snacking.

This skillet works because it stacks the three things I care most about at dinner: a big hit of protein to protect muscle, a pile of vegetables for fiber and fullness, and enough flavor that you don’t feel like you’re “being good.” Garlic, lemon and a little butter do a lot of work here for very few calories.
Forty-three grams of protein in one meal sounds like a lot, but after 35 it’s close to what your body actually needs per meal to keep muscle while you lose fat. Run your own numbers through my protein calculator and you’ll see why I stopped apologizing for big chicken portions.
A Few Notes on the Ingredients
Chicken breast. Cut it into even 1-inch pieces so everything cooks at the same speed. Pat it dry before it hits the pan; wet chicken steams instead of browning. Thighs work too and are more forgiving if you tend to overcook.
Broccoli. Four cups sounds like a lot raw, but it shrinks. Cut the florets small so they cook through in 5 minutes. Keep the stems; peel and slice them thin and they’re the best part.
Broth and lemon. Half a cup of low-sodium broth steams the broccoli and turns the garlic butter into a light sauce. The lemon goes in at the very end so it stays bright. Don’t skip it; it’s what makes this taste like food instead of fuel.

Method
- Pat the chicken dry and season with the salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook 3–4 minutes per side until golden and cooked through. Move to a plate.
- Lower the heat to medium. Add the butter and garlic and cook for 30 seconds, just until fragrant.
- Add the broccoli and broth. Cover and cook 4–5 minutes, until the broccoli is bright green and just tender.
- Return the chicken to the pan with the lemon juice and red pepper flakes. Toss for 1 minute so everything is coated, then serve.

- Add carbs: serve over 3/4 cup cooked brown rice, quinoa or whole-wheat pasta. Good on training days
- Swap the vegetable: green beans, asparagus, snap peas or zucchini all work with the same timing
- Make it creamy: stir 2 tablespoons of plain Greek yogurt into the pan sauce off the heat
- Shrimp version: use 12 oz of peeled shrimp instead of chicken and cook them 2 minutes per side
- Parmesan finish: a tablespoon of grated parmesan over the top adds a salty, savory edge for about 20 calories
Leftovers and Make-Ahead
This keeps 3 days in the fridge and reheats well in a skillet with a splash of water, or in the microwave. The broccoli softens a bit on day two, so if you’re cooking ahead on purpose, pull it from the heat a minute early.
If you want to turn this into proper meal prep, double the chicken and cook it in two batches so the pan isn’t crowded. Portion it with rice into four containers and you’ve got lunches sorted. My meal prep recipes have more ideas built the same way, and the rest of my quick healthy dinners follow the same 20-to-30-minute rule.
Meal Prep Tools I Use
Good containers and a couple of sheet pans make it easy to cook once and eat well all week. A food scale keeps portions honest, and an air fryer reheats leftovers without drying them out. Here is what I recommend. (As an Amazon Associate I earn from qualifying purchases.)

Frequently Asked Questions
How Do I Keep the Chicken from Drying Out?
Three things: cut it evenly, don’t crowd the pan, and take it out as soon as it’s cooked through. It goes back in at the end for one minute to pick up the sauce, so it doesn’t need to sit in the pan while the broccoli cooks.
Can I Make This with Frozen Broccoli?
Yes. Add it frozen with the broth, cover, and give it 6 to 7 minutes instead of 4 to 5. Don’t thaw it first or it turns mushy.
Is This Enough Food for Dinner?
For most women, yes, especially if weight loss is the goal. It’s 400 calories with 43 grams of protein and a lot of volume from the broccoli. If you’re very active or it’s a training day, add the rice or quinoa and you’re closer to 550 to 600 calories.

Buy the ingredients for this twice. Make it once this week on the night you’d normally order in, and note how long it actually took. Then keep the second set of ingredients as your backup for the next time 6:15 sneaks up on you. Having one reliable 20-minute dinner changes more than any meal plan I’ve ever handed out.
