Healthy Sausage Stuffing (Turkey Sausage, Whole-Grain, 14 g Protein)

Whole-grain stuffing with real protein, no white-bread filler

Most stuffing is white bread, butter, and broth, and it tastes great for about four bites. This healthy stuffing starts with whole wheat bread you dry in the oven, adds lean turkey sausage, and gets its sweetness from a diced apple instead of a cup of melted butter.

A three-quarter cup serving gives you 14 grams of protein and 4 grams of fiber at about 215 calories, calculated from the actual ingredients. A box mix made as directed gives you a fraction of the protein and almost none of the fiber.

On a plate where the sides usually add calories and not much else, this one actually helps you feel full. If you want to know what a good protein target looks like for your body, my free protein calculator will tell you in about a minute.

🎯Key Takeaways
  • 14 g protein and 4 g fiber per serving, both several times what a box mix delivers
  • 70 minutes total, and the bread can be dried a day or two ahead
  • The one technique that matters: dry the bread properly first, or it turns to paste the moment the broth hits it
  • Keeps 4 days in the fridge and freezes for 3 months; assemble it the day before and bake it fresh
  • Honest caveat: with whole wheat bread and turkey sausage, it tastes a little heartier and less buttery than the classic. Most people notice the sausage and apple, not the missing butter

Why This Recipe Works

Stuffing is usually the side dish that gives you the least for the most. White bread and butter add up fast, and neither one keeps you full. Swapping in whole wheat bread and adding a real protein turns it into something that earns its spot on the plate.

Protein and fiber are the two things I ask my clients to build every meal around, holiday or not. Getting enough protein at each meal helps you hold on to muscle as you get older, and fiber is what keeps you from wandering back to the counter an hour later.

There is also a strategy reason. If your stuffing carries protein, your plate has two protein sources before you have even thought about it. That makes it much easier to take normal portions of everything else and still leave the table satisfied.

A Few Notes on the Ingredients

Whole wheat bread needs to be a sturdy sandwich loaf or a whole wheat country loaf, not the soft, thin-sliced kind. A pound is about 16 slices. Dry the cubes until they feel like croutons. Soft cubes soak up broth unevenly and the bottom goes gummy.

Lean turkey sausage is sold raw, in links or as a roll. Buy the plain or Italian kind and squeeze it out of the casings if you get links. Check the label: some brands are heavily salted, which is why the recipe adds only half a teaspoon of salt.

Apple is the swap for most of the butter. A firm, sweet-tart apple like Honeycrisp or Gala holds its shape and gives the stuffing a little sweetness against the sage. Leave the skin on for the fiber.

Fresh sage and thyme matter here because there is less fat to carry the flavor. Dried herbs work in a pinch at one-third the amount, but fresh sage is what makes it taste like Thanksgiving.

Tools That Make This Side Easier

A food processor and a sharp knife make chopping the vegetables for stuffing fast. Here is what I recommend. (As an Amazon Associate I earn from qualifying purchases.)

Ingredients

  • 16 oz whole wheat bread
  • 12 oz lean ground turkey sausage
  • 1 tbsp olive oil
  • 1 large yellow onion
  • 3 stalks celery
  • 1 large apple
  • 3 cloves garlic
  • 2 tbsp fresh sage
  • 1 tbsp fresh thyme
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2.5 cups low sodium chicken broth
  • 1 large egg
  • 0.25 cup fresh parsley

Equipment

  • Large skillet
  • Instant-read thermometer
  • Baking dish

Method

  1. Cut the bread into 3/4-inch cubes and spread them on two sheet pans. Bake at 300F for 20 to 25 minutes, stirring once, until dry and lightly toasted. Or leave the cubes out on the counter overnight.
  2. Raise the oven to 375F and grease a 9×13 baking dish. Dice the onion, celery, and apple. Mince the garlic, sage, and thyme.
  3. Heat a large skillet over medium-high heat. Add the turkey sausage and cook, breaking it up, until browned and no pink remains, about 6 minutes. Move it to a large bowl.
  4. Add the olive oil, onion, and celery to the same skillet. Cook 6 to 7 minutes until soft. Add the apple, garlic, sage, thyme, salt, and pepper and cook 2 minutes more.
  5. Add the vegetables and the bread cubes to the bowl with the sausage and toss.
  6. Whisk the egg into 2 cups of the broth and pour it over the bread. Toss until everything is evenly damp. If dry pockets remain, add the last half cup of broth.
  7. Spread the mixture in the baking dish. Cover with foil and bake 25 minutes. Uncover and bake 15 to 20 minutes more, until the top is crisp and golden and the center reads 165F on a thermometer.
  8. Let it rest 10 minutes, scatter the parsley over the top, and serve.

Bake this in a dish, not inside the bird, so the center reaches a safe 165F while the top gets crisp. Nutrition is calculated per serving from the listed ingredients and may vary with brands and substitutions.

Make It Your Own

  • Lower carb: use 12 ounces of bread instead of 16 and add 8 ounces of sliced mushrooms to the skillet with the onion. It bakes up a little denser and the fiber holds.
  • Protein boost: go up to a full pound of turkey sausage and add a second egg. The texture gets closer to a sausage bake, which nobody has ever complained about.
  • Cranberry pecan: stir in half a cup of dried cranberries and half a cup of chopped pecans with the bread. It adds sugar and calories, so keep the portion honest.
  • Vegetarian: skip the sausage, double the mushrooms, and use vegetable broth. Add a half cup of cooked white beans for some protein.
  • Sourdough version: a whole wheat sourdough loaf gives a tangier, chewier stuffing. Dry it the same way.

Storage, Leftovers, and Serving

Do the bread the weekend before and keep the dried cubes in a bag on the counter. On the day before, cook the sausage and vegetables, toss everything together in the baking dish, cover, and refrigerate. Add the egg and broth right before it goes in the oven, and add 10 minutes to the covered bake time since it starts cold.

Leftovers keep 4 days in the fridge. Reheat in a 350F oven, covered, with a splash of broth, then uncovered for the last 5 minutes to crisp the top. It freezes for 3 months; thaw overnight in the fridge first.

Serve it next to my cauliflower mashed potatoes and a spoon of low sugar cranberry sauce. All three are part of my Healthy Thanksgiving Guide, along with the rest of the holiday recipes.

Frequently Asked Questions

Why Is My Stuffing Mushy?

The bread was too soft going in, or it got too much liquid. Dry the cubes until they are hard like croutons, then add the broth in two stages and stop when everything is damp but not soaked. Baking uncovered for the last 15 to 20 minutes lets the extra steam escape and crisps the top.

Can I Make This Stuffing Without Sausage?

Yes. Double the mushrooms, use vegetable broth, and stir in a half cup of cooked white beans for some protein. Chopped walnuts add crunch and a little more. The protein number on the card drops without the sausage, so treat it as a lighter side and put more turkey on the plate.

Is Stuffing Healthy?

This version has 14 grams of protein, 4 grams of fiber, and about 215 calories per three-quarter cup serving, calculated from the listed ingredients. A traditional white bread and butter stuffing runs higher in calories with a small fraction of the protein and fiber. Portion still matters, but this one works for you instead of against you.
