Carrots are the Christmas side nobody thinks about until they taste a really good batch. These honey garlic roasted carrots roast hot until the edges caramelize, then get a quick toss in honey, garlic, and thyme that turns them glossy and sweet.
Each serving is about 102 calories, calculated from the actual ingredients, with 4 g of fiber. Glazed carrots on a buffet are often swimming in butter and brown sugar. These use 1 tablespoon of oil and a little honey for the whole pan.
Everything happens on one sheet pan, which matters on a day when the oven is crowded. The full holiday plan is in my Healthy Christmas Guide.
- About 102 calories and 4 g fiber per serving
- One sheet pan at 425F, about 30 minutes in the oven
- The honey and garlic go on for the last 10 minutes, so the garlic never burns
- Roast them up to 2 days ahead and rewarm in 6 to 8 minutes
- Honest caveat: with about 2 g protein per serving, these are a vegetable side, so let the main dish bring the protein
Why This Recipe Works
High heat does most of the work. At 425F the natural sugars in carrots brown and concentrate, so they already taste sweet before any honey goes on. That means the glaze can stay small.

Vegetables earn their spot on a holiday plate by taking up room. A generous scoop of carrots adds color, fiber, and volume for very few calories, which makes it easier to keep the richer sides to a reasonable portion.
Many women I coach tell me vegetables feel like the boring part of a holiday meal. The fix is not forcing yourself to eat more of them. It is making a version simple enough to cook on a busy day and good enough that you want seconds.
A Few Notes on the Ingredients
Carrots at 2 pounds serve six. Medium carrots halved lengthwise look best on a platter, and rainbow carrots make it extra festive. Baby carrots work in a pinch, though they brown less.
Olive oil at 1 tablespoon is enough to coat the carrots and help them brown. More oil does not make them crispier, it just adds calories.
Honey at 1 1/2 tablespoons makes the glaze. It goes on late because honey scorches quickly at high heat.
Garlic, 4 cloves minced, goes in with the honey for the same reason. Fresh thyme adds a savory, wintry note, and a little chopped parsley at the end makes the color pop.
Salt at 1/2 teaspoon goes on before roasting so it seasons the carrots all the way through. If your main dish is salty, like a holiday ham, you can drop it to 1/4 teaspoon and finish with a pinch of flaky salt at the table.

Honey Garlic Roasted Carrots
Ingredients
Equipment
Method
- Heat the oven to 425F with a rack in the center. Line a large rimmed sheet pan with parchment.
- Peel the carrots. Cut medium carrots in half lengthwise and thick ones into quarters, then cut them into pieces about 3 inches long so they are roughly the same size.
- Toss the carrots on the pan with the olive oil, salt, and pepper. Spread them in a single layer with a little space between pieces.
- Roast for 20 minutes, flipping once halfway, until the carrots are starting to brown at the edges.
- While they roast, mince the garlic and stir it into the honey with the thyme.
- Drizzle the honey garlic mixture over the carrots and toss right on the pan. Roast 8 to 10 minutes more, until the carrots are tender, glossy, and the garlic is golden.
- Sprinkle with chopped parsley and serve warm.

- Butter finish: melt 1 tablespoon of butter into the honey for a richer glaze. It adds about 17 calories per serving.
- A little heat: add a pinch of red pepper flakes to the honey garlic mixture.
- Maple instead of honey: swap in the same amount of pure maple syrup. The nutrition stays almost the same.
- Balsamic glaze: drizzle a teaspoon of balsamic vinegar over the carrots right out of the oven.
- Tangy finish: squeeze a little lemon over the top and scatter a spoonful of crumbled feta before serving.
Storage, Leftovers, and Serving
Peel and cut the raw carrots up to 3 days ahead and keep them in a sealed bag in the fridge. You can also roast them fully up to 2 days ahead, then rewarm on a sheet pan at 425F for 6 to 8 minutes, or in the microwave if the oven is full.
Leftovers keep 4 days in the fridge. Chop them into grain bowls, blend them into a soup, or eat them cold with a scoop of hummus.
On the Christmas plate, they sit perfectly next to my honey Dijon glazed ham, healthy scalloped potatoes, and a bright Christmas salad. For dessert, my healthy mini cheesecakes keep it light. The rest of the menu is in the holiday recipes.
Frequently Asked Questions
How Long Do You Roast Carrots at 425F?
About 28 to 30 minutes for carrots cut in half lengthwise and about 3 inches long. Roast them plain for 20 minutes, then add the honey garlic glaze and roast 8 to 10 minutes more, until a knife slides in easily and the edges are browned.
Are Honey Garlic Roasted Carrots Healthy?
Yes. A serving of this recipe has about 102 calories and 4 g of fiber. Of its 12 g of sugar, much comes from the carrots themselves, since the whole pan uses only 1 1/2 tablespoons of honey.
Can I Use Baby Carrots for Roasted Carrots?
Yes. Pat them very dry and roast them the same way, checking a few minutes early. They will be tender and sweet, but they brown less than whole carrots cut lengthwise.
Why Are My Roasted Carrots Soggy Instead of Caramelized?
The pan is usually too crowded. Carrots packed together steam in their own moisture. Spread them in a single layer with a little space, use two pans if needed, and make sure the oven is fully heated to 425F.
Your This-Week Plan
Roast a pan of these this week alongside whatever protein you are having for dinner. Note how long your oven takes to brown them and whether you like them softer or with more bite. On Christmas Day you will already know the timing, and this side becomes one less thing to think about.
