Keto cheeseburger casserole is the dinner to make when you’re feeding people who aren’t doing keto. Seasoned beef, tender cauliflower, pickles, and a golden cheddar custard, finished with all your favorite burger toppings. Nobody asks where the bun went.
A serving has 5 g net carbs and 45 g of protein for about 533 calories. A fast-food cheeseburger with fries can easily clear 80 g of carbs.
Family meals make it easy to lose track of your own portion. My free TDEE calculator shows roughly how much you burn in a day, so you can serve yourself with confidence.
- 5 g net carbs and 45 g protein per serving, about 533 calories.
- Mustard, tomato paste, and pickles bring the classic burger-sauce flavor without sugary ketchup.
- An egg and cream custard binds the casserole so it cuts into neat squares.
- Cauliflower florets add bulk and soak up the beefy juices, like fries on the side.
- Toppings go on after baking: lettuce, tomato, and sesame seeds make it taste like a burger.
Why This Works on Keto
A burger without the bun is already keto. The trouble is that a plain patty on a plate feels like a punishment. A casserole brings back the whole experience, the sauce, the melted cheese, the crunch of pickles, in a form that feeds a crowd.

Lean ground beef and cheddar deliver a lot of protein per serving, along with iron and zinc. The eggs add even more protein and help the casserole hold together.
This is also a smart meal-prep dish. It reheats well, it freezes well, and it tastes just as good on day three, which is exactly the kind of food that keeps a plan on track.
A Few Notes on the Ingredients
Ground beef at 90% lean means you won’t have to drain much fat, and the finished casserole isn’t greasy. If you use a fattier blend, pour off the excess before adding the seasonings.
Cauliflower florets should be cut small and cooked with the beef until just tender. Frozen florets work; thaw and pat them dry first.
Dill pickles are naturally very low in carbs. Avoid sweet or bread-and-butter pickles, which are made with sugar.
Yellow mustard is the secret to the burger-sauce flavor. Combined with tomato paste and chopped pickles, it tastes like special sauce.

Equipment
Method
- Heat the oven to 375°F and grease a 9×13-inch baking dish. Dice the onion, mince the garlic, and cut the cauliflower into small bite-size pieces.
- Brown the ground beef and onion in a large skillet over medium-high heat, breaking up the meat, about 8 minutes. Pour off any excess fat.
- Add the cauliflower, garlic, salt, and pepper. Cover and cook 5 minutes, until the cauliflower is just tender. Stir in the tomato paste and mustard and cook 1 minute more.
- Chop the pickles and stir them into the beef mixture. Spread it evenly in the baking dish.
- Whisk the eggs and heavy cream, stir in 1 cup of the cheddar, and pour over the beef. Top with the remaining cheddar.
- Bake 22 to 25 minutes, until the center is set and the cheese is golden. Rest 5 minutes.
- Top with halved cherry tomatoes, shredded lettuce, and sesame seeds, then cut into 6 squares.

- Bacon cheeseburger: Stir 6 slices of crisp crumbled bacon into the beef.
- Mushroom Swiss: Replace the pickles with sauteed mushrooms and use Swiss cheese instead of cheddar.
- Swap the protein: Ground turkey works; add a tablespoon of butter since it’s leaner.
- No cauliflower: Use 2 cups of chopped cabbage or diced zucchini instead.
- Dairy free: Skip the cheese and use unsweetened almond milk in the egg mixture.
Storage, Leftovers, and Serving
Cool and refrigerate the casserole, without the fresh toppings, for up to 4 days. Add lettuce and tomato to each portion when you serve it.
To freeze, cut into squares, wrap individually, and freeze up to 3 months. Reheat from thawed in the microwave for 90 seconds or covered in a 350°F oven for 15 minutes.
Serve with a side salad and a drizzle of sugar-free burger sauce made from mayonnaise, mustard, and chopped pickles. For more family-friendly mains, browse my keto dinner recipes.
