Keto Mocha Chia Pudding (4 g Net Carbs, Make-Ahead)

Your coffee and breakfast in one jar, waiting in the fridge

Keto mocha chia pudding is for anyone whose mornings start with coffee and not much else. Strong coffee, cocoa, and cream soak into chia seeds overnight, and by morning you have a thick, spoonable breakfast that tastes like a café mocha.

Each jar has 4 g net carbs, 16 g of protein thanks to a scoop of collagen, and about 266 calories. You stir four jars together in five minutes and they’re done.

Fiber is the quiet hero in this recipe. If you’re curious how much you’re getting overall, my free fiber calculator shows how your intake compares with a sensible daily goal.

🎯Key Takeaways
  • 4 g net carbs and 16 g protein per jar, about 266 calories.
  • Stir twice in the first 10 minutes. That one habit prevents the clumps of dry seeds at the bottom.
  • Collagen dissolves invisibly and turns a light pudding into a breakfast with real protein.
  • Chilled coffee works best. Hot coffee can make the collagen and cream clump.
  • Jars keep 4 days, so one batch covers most of a workweek.

Why This Works on Keto

Skipping breakfast and running on coffee works for some people and backfires for others, who end up ravenous by lunch. This pudding gives you the coffee ritual plus something substantial, without cooking.

Chia seeds are mostly fiber, and fiber doesn’t count toward net carbs. They also swell into a gel that slows digestion, which helps a small jar feel more filling than its size suggests.

Unsweetened cocoa brings deep chocolate flavor for very few carbs, and erythritol handles the sweetness without adding to your net carb count. The result tastes like a treat while fitting comfortably into a keto day.

A Few Notes on the Ingredients

Chia seeds can be black or white; they set the same way. Whole seeds give a tapioca-like texture. If you’d rather have it smooth, blend the finished pudding for 30 seconds.

Brewed coffee should be strong and cooled. Leftover coffee from yesterday’s pot is perfect. Decaf works if you’re eating this later in the day.

Collagen powder should be the unflavored kind. It adds protein without changing the taste or texture.

Powdered erythritol dissolves better than granulated in a cold mixture. Taste the base before adding the seeds and adjust the sweetness then.

Ingredients Method Nutrition Notes

Ingredients

  • 1 cup brewed coffee
  • 1 cup almond milk
  • 0.5 cup heavy cream
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp powdered erythritol
  • 45 g collagen powder
  • 1 tsp vanilla extract
  • 0.125 tsp salt
  • 0.5 cup chia seeds

Method

  1. In a bowl or large measuring cup, whisk the cooled coffee, almond milk, heavy cream, cocoa powder, powdered erythritol, collagen, vanilla, and salt until completely smooth, with no lumps of cocoa.
  2. Taste and adjust the sweetness, then whisk in the chia seeds.
  3. Let the mixture sit 5 minutes and whisk again. Wait another 5 minutes and whisk once more to break up any clumps.
  4. Divide among 4 small jars, cover, and refrigerate at least 4 hours or overnight, until thick.
  5. Stir before eating and add a spoonful of whipped cream or a dusting of cocoa if you like.

Make It Your Own

  • Dairy free: Replace the heavy cream with canned coconut milk. The pudding becomes a little richer and faintly coconutty.
  • More protein: Add another scoop of collagen, or stir in unflavored whey protein after the pudding sets.
  • Caffeine free: Use decaf, or replace the coffee with more almond milk and a pinch of cinnamon for plain chocolate pudding.
  • Different sweetener: Allulose works in the same amount and dissolves easily.
  • Mocha almond: Swirl a teaspoon of almond butter into each jar before serving.

Storage, Leftovers, and Serving

Keep the jars sealed in the fridge for up to 4 days. The pudding thickens a little more each day, so stir in a splash of almond milk if it gets too firm.

Add toppings like whipped cream or a few raspberries just before eating, so they stay fresh. The pudding doesn’t freeze well; the texture turns grainy once thawed.

Grab a jar on your way out and eat it at your desk. For more make-ahead mornings, browse my keto breakfast recipes.

Frequently Asked Questions

Why Didn’t My Chia Pudding Thicken?

It usually needs more time or a better stir. Chia seeds need at least 4 hours, and overnight is better. If the seeds clumped at the bottom, they couldn’t absorb the liquid. Stir well, wait another hour, and it should set.

Is Mocha Chia Pudding Keto Friendly?

Yes. Each jar has about 4 g net carbs, 16 g protein, and 19 g fat. Most of the carbohydrate in chia seeds is fiber, and the erythritol isn’t counted toward net carbs.

How Much Caffeine Is in a Jar?

Each jar contains about a quarter cup of brewed coffee, so roughly a quarter of a normal cup’s caffeine. Use decaf if you’re sensitive, or add a shot of espresso if you want a stronger kick.

Your This-Week Plan

Here’s the experiment: make four jars tonight and eat one on each of your busiest mornings this week. Note whether you reach lunch without grabbing a snack. If you normally skip breakfast and crash later, this is an easy way to see whether a small, protein-rich start changes your afternoon.

This recipe is for general education, not medical advice. Nutrition values are estimates and will vary with brands. If you’re pregnant, have a health condition, or take medication for blood sugar or blood pressure, check with your doctor before starting keto.
