Keto zucchini lasagna has a reputation problem. Too many versions come out of the oven as a soupy mess. This one uses thin zucchini planks that are salted and roasted first, so every slice stands up on the plate like the real thing.
You get 6 g net carbs and 38 g of protein per serving, about 428 calories, calculated from the listed ingredients. The meat sauce uses a modest amount of crushed tomatoes, enough for flavor without blowing your carb budget.
Lasagna is the kind of meal where portions drift. If you want a clear protein target to build your plate around, try my free protein calculator.
- 6 g net carbs and 38 g protein per serving, about 428 calories.
- Salt and roast the zucchini first. It’s the single step that prevents a watery lasagna.
- An egg in the ricotta sets the cheese layer so slices cut clean.
- Keep the sauce thick. Simmer it until a spoon leaves a trail across the pan.
- Rest it 15 minutes before slicing. Hot lasagna always slumps.
Why This Works on Keto
A regular slice of lasagna carries a large share of its carbs in the noodles. Zucchini replaces them with a vegetable that has only a few grams of net carbs per cup, and the layering, sauce, and cheese stay the same.

The protein comes from lean ground beef, ricotta, and two kinds of cheese, so a single square is a genuinely filling dinner. Fat from the cheese slows the meal down and keeps you satisfied well into the evening.
Comfort food matters on keto. Plenty of people quit because they feel they’ve given up every meal they love. Recreating a family favorite that tastes right is one of the best ways to make this way of eating last.
A Few Notes on the Ingredients
Zucchini should be medium-sized and firm. Big ones are seedy and waterlogged. Slice lengthwise about 1/4 inch thick, using a mandoline if you have one, so the planks cook evenly.
Ground beef at 90% lean keeps grease from pooling between the layers. If you use a fattier blend, drain it well after browning.
Ricotta should be whole milk for the best texture. Part-skim tends to weep. Mixing it with an egg and parmesan turns it into a firm, custardy layer.
Crushed tomatoes are the base of the sauce. Check the can and skip any with added sugar. A little tomato paste deepens the flavor without much volume.

Method
- Heat the oven to 400°F. Trim the zucchini and slice lengthwise into planks about 1/4 inch thick.
- Lay the planks on paper towels, sprinkle with 1 teaspoon of the salt, and let them sit 15 minutes. Blot dry, arrange on two parchment-lined sheet pans, brush lightly with the olive oil, and roast 10 minutes. Lower the oven to 375°F.
- While the zucchini roasts, brown the ground beef in a large skillet over medium-high heat, breaking it up, about 8 minutes. Drain any fat. Add the minced garlic and cook 30 seconds.
- Stir in the crushed tomatoes, tomato paste, Italian seasoning, red pepper flakes, and remaining salt. Simmer uncovered 10 minutes, until very thick.
- In a bowl, mix the ricotta, egg, and half of the parmesan until smooth.
- In a 9×13-inch baking dish, spread a thin layer of meat sauce. Add a layer of zucchini, half the ricotta mixture, a third of the sauce, and a third of the mozzarella. Repeat once, then finish with the last zucchini, the remaining sauce, mozzarella, and parmesan.
- Cover with foil and bake 25 minutes. Uncover and bake 15 to 20 minutes more, until bubbling and browned.
- Rest at least 15 minutes before slicing. Top with torn basil and serve.

- Swap the meat: Use half ground beef and half Italian sausage for a more seasoned sauce.
- Lighter: Use ground turkey and part-skim mozzarella. Expect a slightly softer slice.
- Vegetarian: Replace the beef with 12 oz of chopped mushrooms cooked until dry, plus a handful of spinach.
- Eggplant layers: Thin eggplant slices, salted and roasted the same way, work in place of zucchini.
- Extra green: Stir 2 cups of chopped spinach into the ricotta layer.
Storage, Leftovers, and Serving
Once cooled, cover the dish or cut it into squares and store them in containers. It keeps in the fridge for 4 days and freezes well for up to 3 months. Wrap individual squares so you can pull out one at a time.
Reheat a square in the microwave for 90 seconds to 2 minutes, or warm covered in a 350°F oven for 20 minutes. From frozen, thaw overnight in the fridge first for the best texture.

Frequently Asked Questions
How Do I Keep Zucchini Lasagna From Being Watery?
Salt the zucchini planks, let them sit 15 minutes, blot them dry, then roast them briefly before layering. Also simmer the sauce until thick and let the lasagna rest after baking. Those three steps remove most of the moisture that causes a soupy dish.
How Many Carbs Are in Zucchini Lasagna?
This recipe has about 6 g net carbs per serving, with 38 g protein and 27 g fat. Most of the carbs come from the tomatoes and ricotta, and the zucchini adds very little.
Can I Freeze Zucchini Lasagna?
Yes. Bake it, cool it completely, then freeze in portions for up to 3 months. The zucchini softens slightly after freezing, but because it was roasted first, it stays pleasant rather than mushy.
Your This-Week Plan
Here’s the experiment: bake this on Sunday and freeze half in single squares. On the two busiest nights of your week, reheat one instead of reaching for a drive-through. Notice whether having a real meal ready changes how those evenings go.
