Keto chicken parmesan gets its crunch from an unlikely hero: crushed pork rinds mixed with parmesan. They brown like breadcrumbs, stay crisp under the sauce, and add protein instead of carbs.
One cutlet with sauce and cheese has 4 g net carbs and 67 g of protein for about 595 calories. The restaurant version, with its breading and side of pasta, can easily run past 100 g of carbs.
This is a big-protein plate. To see how it fits your day, run your numbers through my free macro calculator and you’ll know exactly how much room is left for fat and carbs.
- 4 g net carbs and 67 g protein per cutlet, about 595 calories.
- Crushed pork rinds plus parmesan make a breading that browns and crunches like the real thing.
- Pound the chicken thin and even so it cooks through before the crust burns.
- Sear first, then bake. The quick sear sets the crust; the oven melts the cheese.
- Keep the sauce simple: crushed tomatoes, garlic, and basil beat most jarred sauces on sugar.
Why This Works on Keto
Chicken parm is one of those meals people miss the most on keto, and it’s usually the breading and pasta they’re really missing. Solve the crunch and the craving mostly takes care of itself.

Chicken breast is one of the leanest, highest-protein foods you can buy. Adding a cheesy crust and mozzarella brings in fat for flavor and fullness without pushing the carbs up.
A little tomato is fine on keto. Half a cup of crushed tomatoes spread across four cutlets adds brightness and very few carbs per plate, especially compared with a sweetened jarred marinara.
A Few Notes on the Ingredients
Pork rinds should be plain, not flavored. Pulse them in a food processor or crush them in a zip-top bag with a rolling pin until they look like coarse breadcrumbs.
Chicken breast cooks unevenly when one end is thick. Slice each breast in half horizontally or pound it to about half an inch so every bite is done at the same time.
Crushed tomatoes make a quick sauce with no added sugar. Check the can: the ingredient list should be tomatoes and maybe salt, nothing else.
Shredded mozzarella melts smoothly and browns nicely under the broiler. Whole-milk mozzarella gives the best stretch.

Keto Chicken Parmesan with Pork Rind Crust
Ingredients
Equipment
Method
- Heat the oven to 400°F. Slice the chicken breasts in half horizontally, or pound them to an even half-inch thickness, to make 4 cutlets. Pat dry and season lightly with salt.
- Crush the pork rinds into fine crumbs, then mix them in a shallow dish with the parmesan, italian seasoning, and garlic powder.
- Beat the eggs in a second shallow dish. Dip each cutlet in egg, then press it firmly into the crumb mixture on both sides.
- Heat the olive oil in a large oven-safe skillet over medium heat. Sear the cutlets 2 to 3 minutes per side until golden. Work in batches if needed and move them to a sheet pan.
- Mince the garlic and stir it into the crushed tomatoes with the basil and the remaining salt.
- Spoon the sauce over the cutlets and top with the mozzarella. Bake 10 to 12 minutes, until the chicken reaches 165°F and the cheese is bubbly. Broil 1 to 2 minutes for browned cheese if you like.

- Chicken thighs: Use boneless thighs for juicier cutlets; add a few minutes to the bake.
- Air fryer: Cook breaded cutlets at 380°F for 10 minutes, flip, top with sauce and cheese, and cook 3 minutes more.
- Pasta-night feel: Serve over zucchini noodles tossed in olive oil and garlic.
- Extra crunch: Double-dip the cutlets, egg then crumbs then egg then crumbs again.
- Nut and pork free: Use all grated parmesan for the coating instead of pork rinds.
Storage, Leftovers, and Serving
Store leftover cutlets in a sealed container in the fridge for up to 3 days. Keep extra sauce separate if you can so the crust stays crisper.
Reheat in a 375°F oven or air fryer for 8 to 10 minutes. The microwave works in a pinch but softens the coating.
Serve with zucchini noodles, a crisp Caesar-style salad, or roasted broccoli. For more weeknight mains, browse my keto dinner recipes.
Frequently Asked Questions
Do Pork Rinds Taste Like Pork in Chicken Parmesan?
Not really. Once they’re crushed, mixed with parmesan and Italian seasoning, and browned, they taste like a savory, crunchy coating. Most people can’t tell they aren’t breadcrumbs unless you tell them.
Is Chicken Parmesan Keto Friendly?
This version is. Each cutlet has about 4 g net carbs, 67 g protein, and 33 g fat. Traditional chicken parm uses flour, breadcrumbs, and sugary sauce, so the restaurant kind is not keto.
Why Does My Breading Fall Off?
Usually the chicken was too wet or the pan was moved too soon. Pat the cutlets dry, press the crumbs on firmly, and let the crust brown for a full 2 to 3 minutes before flipping. Flip only once.
Your This-Week Plan
Here’s the experiment: make chicken parm on the night you’d normally order takeout. Serve it with a big pile of vegetables and notice whether you still feel like you’re missing the pasta. If you don’t, you’ve just replaced one of the hardest keto cravings with a better meal.
