Keto Slow Cooker Buffalo Chicken (2 g Net Carbs, 5 Minutes Hands-On)

Dump it in the morning, shred it at dinner, eat it all week

Keto slow cooker buffalo chicken is about as low-effort as dinner gets. Chicken thighs, butter, hot sauce, and a few spices go into the pot in the morning. By evening they shred into tangy, spicy, tender meat you can pile into lettuce cups, bowls, or over a salad.

A serving has 2 g net carbs and 38 g of protein for about 318 calories. Plain cayenne-style hot sauce has almost no carbs, which makes buffalo one of the easiest flavors to keep keto.

One batch covers lunches and dinners for days. To figure out how much of it belongs on your plate, try my free macro calculator.

🎯Key Takeaways
  • 2 g net carbs and 38 g protein per serving, about 318 calories.
  • About 5 minutes of hands-on work. The slow cooker does everything else.
  • Chicken thighs stay juicy through a long cook; breasts can turn dry and stringy.
  • Stir in cream cheese at the end for a creamy sauce that clings to the chicken.
  • Serve it five ways: lettuce wraps, salad topper, stuffed peppers, omelet filling, or straight from a bowl.

Why This Works on Keto

The busiest weeks are when keto plans fall apart, because there’s no time to cook and the fast options are all carbs. A slow cooker meal you start before work solves that problem before it starts.

Chicken thighs have a little more fat than breasts, which keeps them tender over hours of cooking and adds staying power to each serving. The butter in the sauce adds richness and helps the heat feel rounder.

Buffalo sauce is naturally keto, as long as you choose a plain cayenne pepper sauce. Many bottled wing sauces add sugar or starch, so a quick look at the label matters.

A Few Notes on the Ingredients

Chicken thighs should be boneless and skinless so they shred easily. You can use breasts, but cut the cook time to 3 hours on low to keep them moist.

Hot sauce in the classic cayenne style is the base of buffalo flavor. Check that the label lists peppers, vinegar, salt, and garlic, with no sugar.

Butter is what turns hot sauce into buffalo sauce. It mellows the vinegar and gives the sauce body.

Celery cooks down into the sauce and adds a fresh, savory note. Keep some raw celery for crunch on the side.

Method

  1. Place the chicken thighs in the slow cooker in an even layer. Chop the celery and scatter it over the chicken.
  2. Whisk the hot sauce, melted butter, garlic powder, onion powder, and smoked paprika together and pour over the chicken.
  3. Cover and cook on low for 4 to 5 hours, or on high for 2.5 to 3 hours, until the chicken shreds easily.
  4. Shred the chicken right in the slow cooker with two forks.
  5. Add the cream cheese in small pieces and stir until it melts into the sauce. Let it sit on warm, uncovered, for 10 minutes to thicken slightly.
  6. Top with sliced green onion and serve in lettuce cups, over salad, or in a bowl.

Make It Your Own

  • Dairy free: Use ghee or olive oil instead of butter and skip the cream cheese.
  • Milder: Replace half the hot sauce with chicken broth.
  • Ranch style: Stir a teaspoon of dried dill and a teaspoon of dried parsley into the cream cheese.
  • Instant Pot: Cook on high pressure for 12 minutes with a 10-minute natural release.
  • Buffalo chicken dip: Mix leftovers with extra cream cheese and cheddar, then bake at 350°F until bubbly.

Storage, Leftovers, and Serving

Store the shredded chicken in its sauce in a sealed container in the fridge for up to 4 days, or freeze in portions for up to 3 months.

Reheat in the microwave for 60 to 90 seconds, stirring halfway, or warm in a skillet over medium heat with a splash of broth.

Serve in butter lettuce cups with crumbled blue cheese and celery, or over a big salad. For more easy weeknight meals, browse my keto dinner recipes.

Frequently Asked Questions

Is Buffalo Sauce Keto?

Classic buffalo sauce made from cayenne pepper sauce and butter is keto, with almost no carbs. Some bottled wing sauces add sugar, so check the label for sugar, honey, or modified starch.

Can I Put Frozen Chicken in the Slow Cooker?

It isn’t recommended. Frozen chicken can spend too long in the temperature range where bacteria grow. Thaw the thighs overnight in the fridge before starting.

How Many Carbs Are in Slow Cooker Buffalo Chicken?

A serving has about 2 g net carbs, 38 g protein, and 17 g fat. Almost all the carbs come from the celery, garlic, and cream cheese.

Your This-Week Plan

Here’s the experiment: start this in the slow cooker on your busiest day of the week. Use it three different ways over the next few days: lettuce wraps, a salad topper, and a quick bowl. Notice how much easier the week gets when protein is already cooked and waiting.

This recipe is for general education, not medical advice. Nutrition values are estimates and will vary with brands. If you’re pregnant, have a health condition, or take medication for blood sugar or blood pressure, check with your doctor before starting keto.
