Most taco soup recipes are loaded with beans and corn, which quietly add up to a lot of carbs. This keto taco soup keeps the seasoned beef, tomatoes, and chiles, then melts cream cheese into the broth so it’s rich enough that you won’t miss them.
A bowl comes to 5 g net carbs, 39 g of protein, and about 448 calories, including a handful of cheddar on top. It’s all made in one pot in about 35 minutes.
Hearty soups make portion control easier when you know your targets. My free calorie calculator helps you decide whether one bowl or a bowl and a half suits your day.
- 5 g net carbs and 39 g protein per bowl, about 448 calories.
- Homemade seasoning skips the fillers. Many taco packets contain sugar, cornstarch, or maltodextrin.
- Bloom the spices in the beef fat for a minute before adding liquid. It deepens the flavor.
- Temper the cream cheese with a ladle of hot broth so it melts smoothly instead of clumping.
- It freezes well for 3 months, making it one of the easiest keto meal-prep lunches.

Ground beef provides the protein, and the cheese and cream cheese add fat that makes each bowl satisfying. Removing the beans and corn cuts the carbs dramatically, while the tomatoes, peppers, and spices keep all the familiar taco flavor.
Because it’s so filling, a single bowl often keeps people satisfied until dinner without needing an afternoon snack.
A Few Notes on the Ingredients
Ground beef in an 80/20 or 85/15 blend gives the most flavor. Leave some of the fat in the pot to toast the spices, and spoon off any excess.
Diced tomatoes with green chiles add acidity and gentle heat in one can. Check the label for added sugar and pick a brand without it.
Cream cheese is the secret to the creamy broth. Cut it into cubes and let it soften while the soup simmers.
Chili powder, cumin, and smoked paprika make up the seasoning. Adjust the heat with a pinch of cayenne if you like.

Ingredients
Method
- Dice the onion and green pepper and mince the garlic.
- In a large pot over medium-high heat, cook the ground beef, breaking it up, until browned, 7 to 8 minutes. Spoon off all but about 1 tablespoon of the fat.
- Add the onion and pepper and cook 4 minutes, until softened. Stir in the garlic, chili powder, cumin, smoked paprika, oregano, and salt and cook for 1 minute until fragrant.
- Add the diced tomatoes with their juices and the beef broth. Bring to a boil, then reduce the heat and simmer uncovered for 15 minutes.
- Cut the cream cheese into cubes and place them in a bowl. Whisk in a ladle of hot broth until smooth, then stir the mixture back into the pot.
- Taste and adjust the seasoning. Ladle into bowls and top with the cheddar and cilantro.

- Dairy free: Skip the cream cheese and cheddar, and stir in 0.5 cup of canned coconut milk for creaminess.
- Swap the protein: Ground turkey, ground pork, or shredded chicken thighs all work.
- Slow cooker: Brown the beef and spices, then cook everything except the cream cheese on low for 6 hours. Stir in the cream cheese at the end.
- More vegetables: Add diced zucchini or a handful of spinach during the last 10 minutes.
- Spicier: Add a diced jalapeño with the onion and a pinch of cayenne.
Storage, Leftovers, and Serving
Cool the soup, then refrigerate in sealed containers for up to 4 days. It thickens as it sits, so add a splash of broth when reheating.
To freeze, portion it into freezer-safe containers, leaving room for expansion, and freeze for up to 3 months. Thaw overnight in the fridge and reheat on the stove over medium heat, stirring often.
Top each bowl with sour cream, avocado, and cilantro. For more warm midday meals, look through my keto lunch recipes.
Frequently Asked Questions
Can I Use Store-Bought Taco Seasoning?
You can, but read the ingredient list carefully. Many packets include sugar, cornstarch, or flour. Look for one without added starches, or use the homemade spice mix in this recipe.
How Many Carbs Are in Keto Taco Soup?
Each bowl has about 5 g net carbs, 39 g protein, and 29 g fat. The tomatoes, onion, and pepper supply most of the carbs, since the beans and corn found in traditional versions are left out.
Why Is My Soup Grainy After Adding Cream Cheese?
The cream cheese was probably added cold or the soup was boiling. Soften the cream cheese, whisk it with a ladle of hot broth, and stir that back into the pot over low heat.
