Keto zuppa toscana keeps everything that makes the restaurant favorite so addictive, the spicy sausage, the smoky bacon, the silky cream broth, and the tender kale, and swaps the potatoes for cauliflower that soaks up just as much flavor.
A bowl lands at 6 g net carbs with 33 g of protein and about 636 calories, calculated from the ingredients in the card below. Seasoning your own ground pork also means no hidden sugar or fillers from store-bought sausage.
Curious how a rich soup like this fits into your daily fat and protein targets? My free macro calculator lays out your numbers in about a minute.
- 6 g net carbs and 33 g protein per bowl, about 636 calories.
- Season your own sausage. Fennel, garlic, and red pepper flakes turn plain ground pork into Italian sausage with nothing hidden.
- Cut cauliflower into chunky pieces so it eats like potato instead of disappearing into the broth.
- Add the cream at the end over low heat so it stays smooth.
- Kale goes in last and needs only 3 minutes to turn tender and bright.
Why This Works on Keto
The restaurant version gets most of its carbs from sliced potatoes. Cauliflower has a similar mild, starchy feel when simmered, for a fraction of the carbs, so the soup tastes familiar while fitting easily into a keto day.

Soups built on fat and protein are some of the most filling meals you can make. The pork and bacon bring protein, the cream brings richness, and the broth adds volume, which is a reliable recipe for staying satisfied.
Kale earns its spot too. It’s one of the most nutrient-dense greens you can buy and holds its texture in hot soup instead of melting away like spinach.
A Few Notes on the Ingredients
Ground pork is the base for the homemade sausage. Many packaged Italian sausages contain sugar, corn syrup, or breadcrumbs, and seasoning your own takes about one minute.
Fennel seed is what makes pork taste like Italian sausage. Crush it lightly with the flat of a knife or in a mortar to release more flavor.
Kale should be stripped from its tough center stems and cut into ribbons. Curly kale and lacinato kale both work; lacinato is a little more tender.
Heavy cream gives the broth its signature silky body. Warm it slightly or add it off the boil so it doesn’t break.

Ingredients
Method
- Chop the bacon and cook it in a large pot over medium heat until crisp, about 8 minutes. Scoop it out with a slotted spoon and leave the fat in the pot.
- Crush the fennel seed lightly. Add the ground pork to the pot with the fennel, smoked paprika, red pepper flakes, 1 tsp of the salt, and the pepper. Brown over medium-high heat, breaking it into crumbles, about 8 minutes.
- Dice the onion and mince the garlic. Add them to the pot and cook 3 minutes, until the onion softens.
- Pour in the broth, scraping up any browned bits. Cut the cauliflower into chunky, potato-size pieces and add them. Bring to a boil, then simmer 12 to 15 minutes, until the cauliflower is fork-tender.
- Lower the heat to medium-low and stir in the heavy cream. Add the kale and simmer gently 3 minutes, until wilted and bright green.
- Taste and add the remaining salt if needed. Ladle into bowls and top with the crisp bacon.

- Dairy free: Use full-fat canned coconut milk instead of heavy cream; the flavor turns slightly sweeter but still works.
- Short on time: Use 2 lb of sugar-free Italian sausage with the casings removed and skip the spice blend.
- Swap the greens: Baby spinach works in place of kale; stir it in right before serving.
- Milder soup: Leave out the red pepper flakes and add extra black pepper.
- Turnip twist: Replace half the cauliflower with diced turnip for a firmer, more potato-like bite.
Storage, Leftovers, and Serving
Refrigerate the soup in sealed containers for up to 4 days. The flavors deepen overnight, so it’s even better on day two. Reheat gently on the stove over medium-low heat, stirring often.
Cream-based soups can turn slightly grainy when frozen, but this one holds up reasonably well for up to 2 months. Thaw in the fridge overnight and whisk while reheating to smooth it out.
Top each bowl with grated parmesan if you like. For more warming bowls, browse my keto lunch recipes.
Frequently Asked Questions
Is Zuppa Toscana Keto Friendly?
The restaurant version isn’t, because of the potatoes. This one replaces them with cauliflower, bringing each bowl to about 6 g net carbs with 33 g protein and 53 g fat.
Can I Use Store-Bought Italian Sausage?
Yes. Look for one with no sugar, dextrose, or breadcrumbs on the label, remove the casings, and brown it as directed. You can then skip the fennel, paprika, and extra red pepper in the recipe.
Why Did My Cream Soup Curdle?
Cream can separate if it boils hard or hits a very acidic broth. Lower the heat to a gentle simmer before stirring it in, and don’t let the soup bubble vigorously once the cream is added.
Your This-Week Plan
Here’s the experiment: make this soup for dinner one night and pack the leftovers for lunch the next two days. Notice whether having a hot, rich lunch waiting for you makes it easier to walk past the break-room pastries.
